Mother’s eggplant pajeri recipe

Starting from when my mother ran a small catering business to when she cooked for parties for siblings and neighbors, Mak Besah’s eggplant pajeri was the talk of the town. So today I made it while sharing the recipe. People used to love this. Even now people love it. My kids love it too.

  1. I used eggplant, not big, just cut into four small ones.
  2. Two medium sized shallots, five cloves of garlic, one inch of ground ginger. If you want to mix it up, you love it.
  3. Fry in a frying pan, add 2 tablespoons of dried shrimp powder. This is important. We prefer dried prawns to anchovies.
  4. The stir-fry has become fragrant, add three tablespoons of meat curry spices. Stir until the oil breaks, add a little water, repeat three times. Just a little turmeric powder.
  5. Add half a cup of pure gula melaka. Follow the sweetness level you like. If possible, use pure Melaka sugar.
  6. Add a small container of coconut milk and tamarind juice. Tamarind is like that. I use the one with seeds. Add our eggplant. Add two tablespoons of crackers.
  7. Let the sauce thicken a little, the color is really dark. Let it boil and the eggplants are soft, add salt and spices if necessary.

Close the fire.

What can you do with a side dish like this? Dried fish is also delicious. Sometimes we make fried eggs with anchovy sauce. Serve hot. Sometimes we make butter rice, eggplant pajeri side dishes, boiled eggs too.
